Green Waffles

Hello Hello, Let's go for a new recipe, in Green Power mood. Today I am proposing you a spinach and dried tomato waffle recipe. The recipe is simple, quick to make and healthy. Why choose to make savory waffles? I wanted to make green waffles actually, with little touches of color, a bit to announce spring (even if in Amsterdam nobody understands the completely crazy weather we have at this time, e.g. snow then sun then hailstones then more sun then rain ...) Nevermind...!

So let's go to make green waffles with a subtle spinach taste, I invite you to increase the dose of spinach if you want it to be a little more pronounced. Small advice, do not cook them too long to avoid being too hard. You can also reheat them if you eat them later because the recipe corresponds to about fifteen waffles.

The necessary ingredients are flour, baking powder, cornstarch, silken tofu, olive oil, vegetable milk (here soya), fresh baby spinach, malted yeast, dried tomatoes, salt, pepper, paprika, parsley, wing powder and brown miso (optional). The necessary utensils are a kitchen balance, a blender, a saucepan, a whisk, teaspoon, tablespoon, a waffle mold.

Ingredients:

  • 230g of flour

  • 2 tbsp of cornstarch (or potatostarch)

  • 11g pf baking powder

  • 120g of silky tofu

  • 150g of baby spinach leaves

  • 35g of dried tomatoes

  • 1 tbsp of malted yeast

  • 70g of olive oil

  • 260g of soy milk

  • 1 tsp of brown miso (optional)

  • 1 small tsp of salt

  • 3 turns of a pepper mill

  • 1 tsp of paprika

  • 1 tsp of parsley

  • 1 tsp of garlic powder

- Rinse and hull the spinach leaves, cook them in a saucepan filled with boiling water, containing a teaspoon of brown miso as broth. Cook for about 7min then drain them. - Mix them then put them aside. - Mix the silky tofu with the milk and olive oil with a whisk until the contents are smooth. - Add the baking powder, the malted yeast, the dried tomatoes (previously cut into small pieces), the cornstarch and the spices. Mix. - Incorporate the spinach then the flour (pour in the flour little by little while mixing with a wooden spoon). - Heat the waffle mold and place the equivalent of a tablespoon in the center of the two locations. - To taste alone as an aperitif or as a starter with a salad.

Bon appétit !
