Butternut squash / spinach creamy soup


Hello here, Quick and healthy recipe for a light meal, accompanied by a sandwich if you are more hungry. No need for a lot of ingredients, you will need a butternut squash, fresh spinach, coconut milk, soy cream, salt, pepper, parsley, cumin and garam masala. If you don't have one or if you want to make a soy-free recipe, you can use water instead of soy cream.


 

Ingredients:



  • 400g of butternut squash

  • 80g of fresh spinach leaves

  • 250ml of coconut milk

  • 2 tbsp of soy cream

  • 1 tsp of parsley

  • 1 tsp of cumin

  • 1 tsp of garam masal

  • Salt, pepper




- Peel the squash and cut it into small cubes (if you haven't already bought it pre-cut). Steam it until tender. - Brown the spinach in a drizzle of olive oil over medium / low heat for about 5 to 6 minutes - salt and pepper. - Put everything in a blender or food processor, and mix all the ingredients of the recipe together until a smooth mixture is obtained.
