Provençal muffins


Hello Hello, Here we go again for a muffin recipe! The beautiful days are finally coming, it's hot and the restaurant terraces are opening again, but that won't prevent us from cooking a little! Let's take advantage of the sun (with the windows open or in our gardens) to have an aperitif (with or without alcohol!) Accompanied by delicious homemade muffins with the good taste of summer or simply as a starter accompanied by a small salad. I am using semi-dried tomatoes in this recipe, of course you can use dried tomatoes, that will also be good.

 

The necessary ingredients are olive oil, a red onion, garlic, basil, oregano, parsley, thyme, semi-dried tomatoes (or dried tomatoes), smoked tofu, chickpea flour, wheat flour, baking powder, cornstarch, salt, water, apple cider vinegar. The necessary utensils are a measuring cup, a kitchen scale, teaspoon, tablespoon, a frying pan, a bowl, a wooden spoon, a spatula, a muffin mold.

This recipe of Provençal muffins is:

Ingredients:

  • 1 tbsp of olive oil

  • 1 red onion

  • 3 closes of garlic

  • 1 tsp of basil

  • 1 tsp of oregano

  • 1 tsp of parsley

  • 1 tsp of thyme

  • 95g of semi-dried tomatoes

  • 100g of smoked tofu

  • 120g of chickpea flour

  • 170g of flour (all purpose)

  • 3 tsp of baking powder

  • 1 tbsp of cornstarch

  • 1 pinch of salt

  • 240ml of cold water

  • 120ml of olive oil

  • 7ml of cider vinegar


- Preheat the oven to 200°c (392°F).

- In a frying pan, brown the onion cut into small pieces, the minced garlic cloves and the tofu (also cut into cubes, more or less large according to your taste) in a tablespoon of olive oil.

- Add the spices, leave to heat for 3, 4 minutes on low heat then add the semi-dried tomatoes, brown for about 2 minutes then turn off the heat. - In a bowl, combine the flour, yeast, starch and salt. Then add the water, olive oil and apple cider vinegar. Mix with a wooden spoon.

- Add the contents of the pan, gently mix everything with a spatula. - Grease the muffin cups with a little oil or margarine/vegan butter and pour your dough into them. - Bake for about 25min.
